Start by heating your oven to 325°F and line a baking sheet with parchment paper.
Next, separate egg whites from yolks. Place egg whites in a bowl and beat whites with cream of tartar using an electric hand mixer or standing mixer. Beat until egg whites are fluffy and form stiff peaks.
In another bowl, mix egg yolks, blended cottage cheese, cream cheese, cornstarch, and salt. Mix until smooth.
Next, fold egg whites into the yolk mixture slowly until completely incorporated and smooth.
Using 1/4 cup measuring cup, dole out mixture on to baking sheet. You should end up with 6 scoops total.
Bake for 20-25 minutes or until golden brown. Remove from oven to cool and enjoy with your favorite toppings!
