Ingredients
  

Ground beef

  • 1 lb ground beef 93% lean
  • 1 Tbsp taco seasoning
  • 1/2 cup salsa

Salad

  • 1 head iceberg lettuce chopped
  • 1.5 cups cherry tomatoes halved
  • 1 cup black beans rinsed and drained
  • 1 cup corn frozen
  • 1/4 cup red onion chopped
  • 1/4 cup cheddar cheese shredded
  • 1 green onion chopped
  • 1/2 cup non-fat Greek yogurt

Instructions
 

  • In a large saucepan, heat ground beef over medium heat until it begins to brown. Drain any excess grease from the meat.   
  • Next, add taco seasoning to meat, along with salsa. Stir in spices and break up beef. Set beef aside once cooked.
  • Begin to make salad bowls by chopping up iceberg lettuce as a base and placing it into individual bowls. 
  • Next, add ground beef on top of lettuce followed by corn, beans, tomatoes, onions, and cheese.
  • Top bowls with sliced green onions and greek yogurt. Stir everything together and enjoy! Serve with tortilla chips if desired!
