Ground beef
- 1 lb ground beef 93% lean
- 1 Tbsp taco seasoning
- 1/2 cup salsa
Salad
- 1 head iceberg lettuce chopped
- 1.5 cups cherry tomatoes halved
- 1 cup black beans rinsed and drained
- 1 cup corn frozen
- 1/4 cup red onion chopped
- 1/4 cup cheddar cheese shredded
- 1 green onion chopped
- 1/2 cup non-fat Greek yogurt
In a large saucepan, heat ground beef over medium heat until it begins to brown. Drain any excess grease from the meat.
Next, add taco seasoning to meat, along with salsa. Stir in spices and break up beef. Set beef aside once cooked.
Begin to make salad bowls by chopping up iceberg lettuce as a base and placing it into individual bowls.
Next, add ground beef on top of lettuce followed by corn, beans, tomatoes, onions, and cheese.
Top bowls with sliced green onions and greek yogurt. Stir everything together and enjoy! Serve with tortilla chips if desired!
