Ingredients

  • 1 lb boneless, skinless chicken thighs cut into bite-size pieces
  • 1/2 cup creamy peanut butter
  • 1 Tbsp sesame oil
  • 4 cloves garlic minced
  • 2 Tbsp soy sauce
  • 1/2 cup hoisin sauce
  • 1/2 cup water
  • 4 Tbsp cornstarch
  • 1/2 cup unsalted peanuts crushed
  • 3 Tbsp sesame seeds

Instructions

  • Start by placing chicken pieces into cornstarch. Toss until evenly coated.
  • In a large saucepan over medium heat, place sesame oil and cornstarch-coated chicken in pan. Cook for 10 minutes or until the internal temperature of the chicken is 165°F. Toss chicken throughout cooking.
  • While the chicken is cooking, begin making sauce. In a medium mixing bowl add peanut butter, soy sauce, hoisin sauce, minced garlic, and water. Stir until the sauce is smooth.
  • Pour sauce mixture over cooked chicken. Stir until the chicken is evenly coated.
  • Top chicken with crushed peanuts, and sesame seeds. Enjoy!
