Ingredients
  

  • 2 cups all-purpose flour
  • 2 eggs
  • 1.5 cups applesauce unsweetened
  • 1 cup carrots shredded
  • 1/2 cup maple syrup
  • 1.5 cups zucchini shredded
  • 1/3 cup shredded coconut unsweetened
  • 1 cup raisins
  • 1 tsp vanilla extract
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 Tbsp cinnamon
  • 1 apple peeled and shredded
  • 1/2 cup pecans chopped
  • 4 Tbsp hemp hearts

Instructions
 

  • Heat oven to 350° F. Line 12 muffin tins.  
  • Using a stand mixer, beat eggs, maple syrup, vanilla extract, salt, and applesauce.
  • Once mixture is smooth, mix in flour, baking powder, and cinnamon. Mix well. 
  • Now, fold in shredded carrots, shredded zucchini, shredded apple, shredded coconut, chopped pecans, and hemp hearts.
  • Scoop mixture into lined muffin tins. Bake for 20-22 minutes.
