- 2 cups all-purpose flour
- 2 eggs
- 1.5 cups applesauce unsweetened
- 1 cup carrots shredded
- 1/2 cup maple syrup
- 1.5 cups zucchini shredded
- 1/3 cup shredded coconut unsweetened
- 1 cup raisins
- 1 tsp vanilla extract
- 1 tsp salt
- 1 tsp baking powder
- 1 Tbsp cinnamon
- 1 apple peeled and shredded
- 1/2 cup pecans chopped
- 4 Tbsp hemp hearts
Heat oven to 350° F. Line 12 muffin tins.
Using a stand mixer, beat eggs, maple syrup, vanilla extract, salt, and applesauce.
Once mixture is smooth, mix in flour, baking powder, and cinnamon. Mix well.
Now, fold in shredded carrots, shredded zucchini, shredded apple, shredded coconut, chopped pecans, and hemp hearts.
Scoop mixture into lined muffin tins. Bake for 20-22 minutes.
