- 1 Tbsp olive oil
- 1 lb ground turkey
- 1 red onion small
- 1/2 cup peas frozen
- 1/2 cup corn frozen
- 2 cloves garlic minced
- 1 egg
- 1/2 cup bread crumbs
- 1/4 cup Swiss cheese shredded
- parsley chopped
Sweet & Tangy Sauce
- 1/4 cup ketchup
- 3 Tbsp honey
Heat oven to 375 degrees F. Line baking loaf pan with parchment paper.
Chop up onions and sauté in pan with minced garlic and olive oil.
In a large mixing bowl, add sautéed onions, garlic, and mix with ground turkey, egg, bread crumbs, corn, peas, and shredded cheese.
Put turkey mixture into lined loaf pan and bake in oven for 45 minutes.
While meatloaf is baking, combine honey and ketchup.
When meatloaf comes out of the oven, top with honey/ketchup mixture.
Garnish with fresh chopped parsley.
