Ingredients
  

  • 2 tsp olive oil
  • 1 cup red onion chopped
  • 1 lb 93% lean ground beef
  • 1 orange bell pepper
  • 2 Tbsp taco seasoning
  • 1 cup corn frozen
  • 1 can black beans drained and rinsed
  • 1.5 cups salsa
  • 8 flour tortillas
  • 2 cup Mexican shredded cheese low fat
  • 1 avocado diced
  • 1/3 cup cherry tomatoes halved
  • cilantro chopped for garnish

Instructions
 

  • Heat oven to 350° F.
  • In a large skillet, heat olive oil with onions over medium heat. Cook for 2 minutes. 
  • Next, add ground beef with taco seasoning. Cook until meat is browned. Drain excess grease if desired. 
  • Add in chopped bell pepper. Cook for about 2 minutes or until peppers begin to soften. 
  • Now add in salsa, corn, and black beans. Stir until well combined. 
  • Take 4 tortillas and lay them flat in a baking dish. Add half of the ground beef mixture on top of the tortillas and top with half of shredded cheese.
  • Next, layer remaining tortillas and repeat the layering process with remaining meat and cheese. 
  • Cover baking dish, and place in the oven for 25 minutes; then, uncover and bake for an additional 5-10 minutes. 
  • Top with chopped tomatoes, avocado, and cilantro.
