- 2 tsp olive oil
- 1 cup red onion chopped
- 1 lb 93% lean ground beef
- 1 orange bell pepper
- 2 Tbsp taco seasoning
- 1 cup corn frozen
- 1 can black beans drained and rinsed
- 1.5 cups salsa
- 8 flour tortillas
- 2 cup Mexican shredded cheese low fat
- 1 avocado diced
- 1/3 cup cherry tomatoes halved
- cilantro chopped for garnish
Heat oven to 350° F.
In a large skillet, heat olive oil with onions over medium heat. Cook for 2 minutes.
Next, add ground beef with taco seasoning. Cook until meat is browned. Drain excess grease if desired.
Add in chopped bell pepper. Cook for about 2 minutes or until peppers begin to soften.
Now add in salsa, corn, and black beans. Stir until well combined.
Take 4 tortillas and lay them flat in a baking dish. Add half of the ground beef mixture on top of the tortillas and top with half of shredded cheese.
Next, layer remaining tortillas and repeat the layering process with remaining meat and cheese.
Cover baking dish, and place in the oven for 25 minutes; then, uncover and bake for an additional 5-10 minutes.
Top with chopped tomatoes, avocado, and cilantro.
