1 onion small, diced 1 cup carrots sliced 1 cup celery sliced 2 cloveds garlic minced 1 cup whole milk 3 cups chicken broth low sodium 5 cups broccoli chopped 2 cups cheddar cheese shredded 1 cup cottage cheese blended 2 Tbsp sour cream 2 Tbsp butter 2 Tbsp flour 1/2 tsp salt 1/2 tsp black pepper
In a large pot, add butter. Heat over medium heat. Allow butter to melt and then add in carrots and celery. Allow to cook for 3-5 minutes.
Next, stir in flour. Mix well.
Once flour is incorporated, add onion, garlic, salt, and pepper. Allow to cook for an additional 3-5 minutes.
Next, add broccoli, and then pour broth over the mixture.
Allow mixture to simmer over medium-low heat for 30-45 minutes or until it reaches a boil.
Now add in blended cottage cheese, sour cream, and milk. Blend the soup with an immersion blender.
Lastly, remove soup from the heat and stir in cheddar cheese. Enjoy!
