Ingredients
  

  • 1 onion small, diced
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 2 cloveds garlic minced
  • 1 cup whole milk
  • 3 cups chicken broth low sodium
  • 5 cups broccoli chopped
  • 2 cups cheddar cheese shredded
  • 1 cup cottage cheese blended
  • 2 Tbsp sour cream
  • 2 Tbsp butter
  • 2 Tbsp flour
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  •  In a large pot, add butter. Heat over medium heat. Allow butter to melt and then add in carrots and celery. Allow to cook for 3-5 minutes. 
  • Next, stir in flour. Mix well. 
  • Once flour is incorporated, add onion, garlic, salt, and pepper. Allow to cook for an additional 3-5 minutes. 
  • Next, add broccoli, and then pour broth over the mixture. 
  • Allow mixture to simmer over medium-low heat for 30-45 minutes or until it reaches a boil. 
  • Now add in blended cottage cheese, sour cream, and milk. Blend the soup with an immersion blender. 
  • Lastly, remove soup from the heat and stir in cheddar cheese. Enjoy!
