Greek Salad with Baked Chicken Thighs & Tzatziki

Ingredients
  

  • 3 cups lettuce
  • 1 red onion sliced
  • 1 cup cucumber sliced
  • 1 cup cherry tomatoes halved
  • 3 Tbsp dill chopped
  • 1/2 cup black olives pitted
  • 1 lemon juiced
  • 1 block feta cheese crumbled
  • 1/2 cup tzatziki

Chicken

  • 1 lb chicken thighs boneless, skinless
  • 2 Tbsp olive oil
  • 1 tsp oregano dried
  • 1/2 tsp thyme dried
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • Heat oven to 350° F. Grease baking sheet. 
  • Start by coating chicken thighs in olive oil, oregano, thyme, salt and pepper. 
  • Place coated chicken thighs on greased baking sheet and bake for 30 minutes or until internal temperature is 165 degrees. 
  • Set chicken thighs aside to cool. 
  • Begin preparing salad. In a large bowl, add lettuce, followed by chopped cucumbers, halved tomatoes, sliced onion, olives, crumbled feta, and chopped dill. 
  • Slice cooled chicken thighs and place on salad. 
  • Squeeze lemon juice and drizzle tzatziki over salad. Stir and serve!
