Gluten-free Homemade Apple Pie Granola

Ingredients
  

  • 2.5 cups quick oats
  • 1/2 cup pecans chopped
  • 1/4 tsp nutmeg ground
  • 1.5 tsp cinnamon ground
  • 1/4 tsp salt
  • 1 apple chopped into 1/4-inch cubes
  • 1/3 cup coconut oil melted
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 325 degrees and line baking sheet with parchment paper.
  • In a large mixing bowl combine oats, pecans, cinnamon, nutmeg, salt, and cubed apples. Pour coconut oil, maple syrup, and vanilla in until completely coated.
  • Spread mixture on to the lined baking sheet, flatten mixture, and bake for 22-28 minutes. Stirring halfway through.
  • Allow to cool for at least 20 minutes. Store in an airtight container for 1 week.
