Preheat oven to 325 degrees and line baking sheet with parchment paper.
In a large mixing bowl combine oats, pecans, cinnamon, nutmeg, salt, and cubed apples. Pour coconut oil, maple syrup, and vanilla in until completely coated.
Spread mixture on to the lined baking sheet, flatten mixture, and bake for 22-28 minutes. Stirring halfway through.
Allow to cool for at least 20 minutes. Store in an airtight container for 1 week.
