Ingredients
  

Slaw Ingredients

  • 4 cups purple cabbage shredded
  • 1 cup carrots thinly sliced
  • 1 orange bell pepper thinly sliced
  • green onions chopped for garnish

Dressing Ingredients

  • 1/2 cup creamy peanut butter
  • 2 Tbsp low-sodium soy sauce
  • 2 Tbsp rice vinegar
  • 1 Tbsp sesame oil
  • 1 Tbsp maple syrup
  • 1 Tbsp ginger freshly grated
  • 3 cloves garlic minced
  • 1 Tbsp lime juice
  • Salt & Pepper to taste

Instructions
 

  • Begin by shredding purple cabbage with a food processor or by hand.
  • Next, thinly slice carrots and pepper. 
  • In a large bowl, combine shredded cabbage, sliced carrots, and sliced peppers. Set aside. 
  • In a medium bowl, combine peanut butter, soy sauce, rice vinegar, sesame oil, maple syrup, grated ginger, minced garlic, and lime juice. Stir well. Add salt and pepper to taste. Thin with 1 tablespoon of water if the consistency is too thick. 
  • Pour peanut dressing over slaw mix. Stir well until everything is well-coated. Top with chopped green onions. Enjoy!
