Begin by shredding purple cabbage with a food processor or by hand.
Next, thinly slice carrots and pepper.
In a large bowl, combine shredded cabbage, sliced carrots, and sliced peppers. Set aside.
In a medium bowl, combine peanut butter, soy sauce, rice vinegar, sesame oil, maple syrup, grated ginger, minced garlic, and lime juice. Stir well. Add salt and pepper to taste. Thin with 1 tablespoon of water if the consistency is too thick.
Pour peanut dressing over slaw mix. Stir well until everything is well-coated. Top with chopped green onions. Enjoy!
