Easy Cookies with Rainbow Sprinkles- Soft and Chewy!

These homemade sprinkle cookies are baked to perfection with a soft center, festive colors, and delicious chocolate and peanut butter chips.

Ingredients
  

  • 1 stick butter softened
  • 1 egg
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1.5 cups all-purpose flour
  • 1.5 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup sprinkles
  • 1/2 cup chocolate chips semi-sweet
  • 1/2 cup peanut butter chips

Instructions
 

  • Preheat oven to 350 degrees. Line baking sheet with parchment paper. 
  • Using a standing mixer, whisk flour, sugar, baking powder and salt together.
  • Mix butter, egg, and vanilla into dry ingredients. 
  • Fold in sprinkles, chocolate chips, and peanut butter chips.
  • Roll mixture into 22 balls. Bake for 9-11 minutes.
