Ingredients
  

  • 1 cup rice
  • 1 lb chicken breast cubed
  • 1/2 cup feta cheese crumbled
  • 1.5 cups low-sodium chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1 tsp paprika
  • 1/4 cup tzatziki
  • 1 English cucumber diced
  • 1 lemon juiced

Instructions
 

  • Heat oven to 375°F. Set aside a 9x13-inch baking dish. 
  • Place rice, cubed chicken, broth, and spices into baking dish. Stir until everything is evenly distributed. Cover baking dish with tinfoil and place in oven for 40-45 minutes. 
  • Once cooked, stir mixture. Scoop chicken rice into a bowl and top with chopped cucumber, feta, tzatziki, and a squeeze of lemon juice. Enjoy!
