Ingredients
  

  • 1/2 cup olive oil
  • 1/2 cup red wine vinegar
  • 1 cup prunes pitted
  • 1/2 cup Spanish green olives
  • 1/2 cup capers + juice
  • 2 Tbsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 lb chicken thighs skinless & boneless
  • 1 lb chicken breasts skinless & boneless
  • 1 cup dry white wine
  • 1/4 cup brown sugar
  • 1/4 cup fresh parsley chopped
  • 6 cloves garlic minced
  • 1 shallot minced

Instructions
 

  • In a large bowl, combine olive oil, capers, caper juice, shallots, olives, prunes, red wine vinegar, white wine, garlic, oregano, salt, and pepper. Add chicken to mixture and allow to marinate in the fridge for at least 6-8 hours.
  • Heat oven to 350°F, and place marinaded chicken in baking dish. Pour remaining marinade on top of the chicken.
  • Next, sprinkle brown sugar on top of the chicken. Bake chicken uncovered for 45-60 minutes, or until internal temperature is 165 degrees. 
  • Once chicken is out of the oven top with fresh parsley. Enjoy!
