Salad Ingredients

  • 4 cups romaine lettuce chopped
  • 1 can chickpeas rinsed
  • 1 cup mozzarella pearls
  • 1 can artichoke hearts sliced
  • 1 cup grapes sliced
  • 1 cup black olives sliced
  • 1/2 cup cucumber diced
  • 1/2 cup grape tomatoes halved
  • 1 cup roasted red peppers jarred, diced
  • 1/2 cup peperocinis slices
  • 1/4 cup parmesan cheese shaved
  • 1/4 cup parsley chopped

Dressing Ingredients

  • 1/2 cup olive oil
  • 1 tsp dijon mustard
  • 1 tsp apple cider vinegar
  • 2 tsp maple syrup
  • 2 tsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions
 

  • Start by chopping your vegetables.
  • Begin assembling salad with chopped romaine as the base. Then add chickpeas, mozzarella pearls, artichoke hearts, grapes, olives, cucumbers, tomatoes, roasted red peppers, peperoncinis, parmesan, and parsley. 
  • Next, begin dressing. Take a small mixing bowl and add olive oil, Dijon mustard, apple cider vinegar, maple syrup, lemon juice, salt, and pepper. Stir until well combined. 
  • Pour dressing over salad, toss, and serve.
