Chocolate Chip Pecan Pie Bars

Ingredients
  

  • 1/2 cup + 2 Tbsp Butter softened
  • 1/4 cup Brown sugar
  • 1.25 cups All-purpose flour
  • 1/2 tsp Salt

Pecan Pie Filling

  • 3 Eggs
  • 3/4 cup Corn syrup light
  • 1/2 cup Granulated sugar
  • 2 cups Semi-sweet chocolate chips
  • 2 cups Pecans chopped

Instructions
 

  • Heat oven to 350°F. Line a 9 x 13-inch baking pan with parchment paper or tin foil. 
  • With an electric mixer, beat softened butter with brown sugar, flour, and salt until mixture forms coarse crumbs. 
  • Pour crumb mixture into lined baking pan and press mixture into bottom of the pan. 
  • Bake crust for 25-30 minutes, or until lightly brown. Allow to cool for 10 minutes once out of the oven.
  • In a large bowl, combine eggs, corn syrup, sugar, and melted butter. Add in chocolate chips and pecans.
  • Spread mixture over baked crust, and bake again for an additional 25-30 minutes. Allow to cool completely before cutting into bars.
