Baked Sheet Pan Tacos (easy weeknight dinner!)

Ingredients
  

  • 1 lb Ground beef 93% lean
  • 1 lb Ground turkey
  • 2 Tbsp Taco seasoning
  • 1/2 cup Water
  • 3 cloves Garlic minced
  • 1 Lime juiced
  • 4 oz Green chilies canned, diced
  • Salt & pepper to taste
  • 1 Tbsp Olive oil
  • 8 oz Colby jack cheese shredded, divided
  • 20 Corn tortillas 6-inch

Instructions
 

  • Preheat oven to 425 and lightly grease 2 large baking sheets.
  • Heat 1 tbsp of oil in large skillet pan over medium heat. Add ground beef and ground turkey to pan. Cook until no longer pink, and drain excess fat.
  • Now add taco seasoning, water, garlic, lime juice, diced green chiles, salt and pepper to taste. Cook for about 5 minutes until moisture has evaporated.
  • Next stir in 1 cup shredded cheese until combined with meat. Turn off burner and remove from heat.
  • Heat up tortillas for 30 seconds to make more pliable for assembly.
  • Place 1/4 cup ground meat mixture onto half tortilla and then top with additional shredded cheese and fold in half.
  • Lightly brush tortillas with oil. Repeat tortilla assembly process and place each on baking sheet.
  • Bake for 15-20 minutes until crispy.
  • Serve tacos with your favorite toppings like sour cream, shredded lettuce, lime, cilantro, salsa, guacamole, and tomatoes.
