Baked Lemon, Parmesan & Panko Crusted Cod Fillets

Ingredients
  

  • 6 fillets cod
  • 1/3 cup parmesan cheese grated
  • 1/2 cup panko bread crumbs
  • 4 cloves garlic minced
  • 1 tsp Italian seasoning
  • 2 tsp fresh parsley chopped
  • 1 lemon zested
  • 2 Tbsp olive oil
  • salt & pepper to taste

Instructions
 

  • Heat oven to 425°F. Line a baking sheet with parchment paper.
  • Take cod fillets and pat dry with a paper towel. Next lightly season each side with salt and pepper; place on baking sheet. 
  • In a small bowl, mix grated parmesan, bread crumbs, parsley, minced garlic, lemon zest, Italian seasoning, and olive oil. 
  • Spread breading mixture on top of each cod fillet, lightly pressing breading into the fillet.
  • Place cod fillets in the oven for 10-14 minutes or until the internal temperature is 145°F. Serve with freshly squeezed lemon on top!
