- 6 fillets cod
- 1/3 cup parmesan cheese grated
- 1/2 cup panko bread crumbs
- 4 cloves garlic minced
- 1 tsp Italian seasoning
- 2 tsp fresh parsley chopped
- 1 lemon zested
- 2 Tbsp olive oil
- salt & pepper to taste
Heat oven to 425°F. Line a baking sheet with parchment paper.
Take cod fillets and pat dry with a paper towel. Next lightly season each side with salt and pepper; place on baking sheet.
In a small bowl, mix grated parmesan, bread crumbs, parsley, minced garlic, lemon zest, Italian seasoning, and olive oil.
Spread breading mixture on top of each cod fillet, lightly pressing breading into the fillet.
Place cod fillets in the oven for 10-14 minutes or until the internal temperature is 145°F. Serve with freshly squeezed lemon on top!
