Sausage and Vegetable Cauli-rice Skillet


1 large head cauliflower or 3-4 cups riced cauliflower

1 T coconut oil

½ red onion, diced

2 zucchini, diced

12 ounces mushrooms, slicedJuice

1/2 lemon2 t salt

½ t cayenne pepper2 cups baby spinach

12 ounces turkey sausage, precooked Optional: shredded mozzarella or Parmesan cheese


1. Rice the cauliflower using a food processor or blender.

2. In a large skillet, heat coconut oil. Add chopped zucchini, onion, and mushrooms. Saute approximately 5 minutes.
