Paleo Egg Cups


1 Tbsp olive oil

1/2 vidalia onion, thinly sliced

3/4 cup red bell peppers, chopped

1.5 cup spinach (fresh or frozen)1 tsp fresh oregano

9 eggs

3/4 tsp salt

1/4 cup coconut milk pepper to taste


Line muffin pan with tinfoil cups. Spray each with olive oil spray. Preheat oven to 350. Cook peppers and onions in oil. Add in spinach and cook down. Mix eggs, salt, and pepper in separate bowl. Combine all ingredients together. Pour into muffin cups. Cook for 18-20 minutes or until egg is
