Georgia is the largest producer of peanuts in the United States, accounting for half of the country’s total peanut production. I have always loved peanuts as a nutritious and versatile food, and on a recent trip to Georgia with the Georgia Peanut Commission, I learned so much more about this legume.
As part of the Georgia Peanut Commission and Southern Peanut Growers Tour, I was able to experience the farm-to-table journey of peanuts. This included:
- Hands-on education on how peanuts are harvested, handled and shelled.
- Meeting family farmers and learning about the sustainability of peanut crops, including their natural ability to renew nutrients for the soil.
- A visit to the PB2 plant where I learned how oil is extracted from peanuts before grinding them into a fine powder, creating a lower calorie way to enjoy peanuts.

- 1 1/3 Cup Peanut butter
- 1/3 Cup Honey
- 1 1/3 Cup Rolled oats
- 1 tsp Vanilla extract
- 3/4 Cup Chocolate chips
Instructions
- Line a 8-inch square pan with parchment paper.
- In a microwave-safe bowl, combine 1 cup peanut butter with honey and heat for 20 seconds in the microwave. Stir, and then heat again for an additional 20 seconds. Stir again and add in vanilla extract.
- Now fold oats into peanut butter mixture.
- Spread mixture into lined pan.
- Microwave remaining 1/3 cup peanut butter with chocolate chips in 30-second increments until melted together. Stir well.
- Pour chocolate peanut butter mixture over oats, and freeze for 45 minutes. Slice bars into 12 servings.
