Mediterranean Salad
Ingredients
Salad
- 3 cups cooked quinoa
- 2 cups drained chickpeas
- 1 cup cucumbers
- 1/2 cup sliced onion
- 1 cup corn
- 1/4 cup sunflower seeds
- 1/4 cup chopped mint
- 1/4 cup chopped parsley
Dressing
- 1 generous pour olive oil
- Balsamic vinegar
- 1 drop maple syrup
- 1 tsp Dijon mustard
Instructions
- Prepare quinoa and set aside.
- Cut and trim vegetables.
- Mix dressing ingredients. Pour over salad once fully combined.
