MANN™ Kohlrabi “Linguine” Asian Salad with Spicy Peanut Dressing

There is no shortage of pasta around my house. Traditional white pasta, bean-based, whole grain and the list goes on. While some of my favorite meals use these noodles, and you know this pregnant momma has been enjoying some pasta recently, I’m not always in the mood for these carb-dense meals that feel heavy. Veggie noodles are a favorite of mine, hot or cold, saucy or plain, meal or snack, I love to use veggie noodles when I’m craving something a little lighter. Sometimes I look forward to the dense, starchy noodles with a lighter sauce, while other times I choose the veggie noodles with heavier sauces. It’s all about balance! While there is no shortage of veggie noodle options available, MANN™ Kohlrabi “Linguine” has become a fast favorite in my house.

I’m sure many of you are looking at that word… kohlrabi… and thinking I misspelled something. I double-checked and it’s correct; it’s just the name of your new favorite vegetable :)! Think of this veggie as a cross between a turnip, cabbage and broccoli, with large edible leaves and a bulb that can be eaten raw or cooked. I love the texture of the MANN™ Kohlrabi “Linguine” the fiber it packs that helps keep me regular during pregnancy, and, the best part, they are only 25 calories per 2 cups which means I can fill up on a large volume while staying mindful of energy intake. Kohlrabi also provides potassium, an important mineral that serves as an electrolyte by helping muscles to contract AND it can even counterbalance sodium and be beneficial for your blood pressure. Additionally, you can find vitamins C and K, calcium and antioxidants in this vegetable. Is there anything not to like about kohlrabi noodles?! I don’t think so.

Another reason I have been using kohlrabi noodles so much recently is their versatility. Here are some of the ways I’ve used them so far:

  • As a traditional pasta dish topped with tomato sauce and parmesan cheese
  • Steamed and tossed with pesto to serve as a veggie side
  • Raw and incorporated into a large dinner salad
  • An Asian salad with spicy peanut dressing

I love peanut butter in all forms and fashions, and this Asian salad with spicy peanut dressing using MANN™ Kohlrabi “Linguine” truly hits the spot. This dish comes together quickly for a dinner meal and holds well as leftovers the next day. Leftovers from dinner make packing a lunch the next day so much easier. Am I right?! The balance of the thick peanut sauce with the light kohlrabi noodles is a match made in heaven. This dish would also be amazing to bring as a summer potluck dish, too!

Do yourself a favor and add more veggies to your life with MANN™ Kohlrabi “Linguine”

2 packages MANN™ Kohlrabi “Linguine”
2 Tbs. natural peanut butter
3 Tbs. rice wine vinegar
4 Tbs liquid aminos
1 Tbs. sesame oil
2 tsp. sriracha
1 clove garlic, grated or garlic powder
1 tsp. ginger (powder or fresh)
If desired:
Shredded carrots
Sesame seeds
Chopped scallions
1. Combine all sauce ingredients in a bowl and mix well with whisk.
2. Pour sauce into a medium skillet over low-medium heat. Stir constantly – the aim is to reduce the sauce to a thick paste, and the sauce will burn quickly.
3. Once the sauce is at a paste consistency, add the MANN™ Kohlrabi “Linguine”.
4. Toss frequently for about 5-7 minutes, or until the MANN™ Kohlrabi “Linguine”  are tender.
5. Garnish with sesame seeds, carrots, cucumber, and scallions, and serve alongside extra sriracha and soy sauce if desired.
6. Add a fried egg for extra protein!
Serves 4 as a main course.
