Inventive Ways to Enjoy Beef

I am sure you have heard many conflicting opinions and articles of research regarding processed meats; I know I have! There are so many ways to incorporate protein into your diet and processed meats, including hot dogs, pastrami, roast beef and summer sausage, are a convenient and flavorful way to do so. Did you know these meat products also contain essential nutrients, like iron and zinc, and according to the Dietary Guidelines for Americans, they can be part of a healthy, balanced diet (1, 2, 3)?


Beefshi is an innovative culinary concept created to combine beef products like those listed above, as well as bologna and corned beef, with rice and vegetables to prepare a sushi-like roll. This is probably a new idea to you, as it was to me, but aren’t we all looking for inventive ways to enjoy the foods we love? A culinary institute of American-trained chefs developed Beefshi in efforts to showcase prepared beef items in a new way. Mission accomplished!

I decided to jump on the Beefshi bandwagon and prepare a delicious roll. The prepared beef provides a protein boost while the vegetables and rice give me an array of micronutrients and fiber to create a balanced meal. Here I used beef jerky to create an AMAZING meal, but this could easily be used as an appetizer or snack as well.

Beefishi recipes taste as good as they look, and just as you may share sushi at a restaurant with your family and friends, Beefshi can be enjoyed in the same fashion. While you may not be having guests over for a dinner party any time soon, if you have a family with many different food preferences, Beefshi allows each individual to create a roll with their meat and vegetable of choice. That beats making several different entrees to please the family! If you have never made sushi before, you may feel uneasy about the process. Fear not! The Hiker’s Roll


2 eggs, beaten
5 sheets nori, cut in half
2 cups prepared sushi rice
2.85 ounces beef jerky, in choice of flavor, very finely shredded
1 cups pea shoots or watercress
1 avocado, diced
Sriracha, soy and/or wasabi for serving


Set a non-stick skillet over medium heat and coat it with cooking spray. Pour in the eggs and let them set until firm. Slide the omelet out of the pan, let it cool slightly and then cut it into thin slices.

To assemble hand rolls simply layer ingredients atop a piece of nori, starting with rice and building your roll as desired. Roll the nori into a cone, top with sriracha, soy and/or wasabi, as desired, and eat!
