Simple Ingredients for this Easy Sprinkle Cookie Recipe

  • Butter: Butter in a cookie recipe adds richness and flavor, creating a soft, melt-in-your-mouth texture that makes each bite incredibly satisfying. Salted and unsalted butter work here, so go with your preference. Just make sure your butter is at room temperature before combining ingredients.
  • Egg: Eggs in a cookie recipe provide structure and moisture, helping bind the ingredients together for a soft and chewy texture. If you want to eliminate the egg from this recipe, try using a flax egg.
  • Sugar: Granulated sugar in a cookie recipe adds sweetness and helps create a slightly crisp texture, balancing perfectly with the soft, chewy center. Although it may not be the healthiest ingredient, it provides the familiar cookie flavor and texture. Swap some of your sugar for a sugar substitute to reduce the sugar and calories in this recipe.
  • Vanilla extract: Vanilla extract enhances a cookie recipe with a warm, aromatic sweetness that deepens the overall flavor and brings out the richness of other ingredients. Swap for almond extract if you prefer that flavor more.
  • All-purpose flour: All-purpose flour in a cookie recipe provides the essential structure, giving cookies their shape and soft, chewy bite. To fiber to this recipe, replace half of our all purpose flour with a whole wheat option.
  • Sprinkles: The start of the show, the addition of sprinkles provide color, texture, and a bit of sweetness to this classic sugar cookie recipe. Swap your rainbow sprinkles for any sprinkle variety of your choice, like Halloween sprinkles or Valentine’s day hearts.
  • Chocolate chips: Chocolate adds warmth, depth, and flavor to cookies, not to mention a familiar and beloved flavor. I went with semi-sweet in this recipe, but you could also use dark chocolate and white chocolate chips, if you prefer.
  • Peanut butter chips: Combined with the chocolate chips, these PB chips provide such amazing flavor. For this with allergies, simply skip the peanut chips, or replace them with additional chocolate or allergen-friendly chips.

How to Make Chewy Sprinkle Cookies

1. Preheat your oven to 350 degrees. Line baking sheet with parchment paper.

2. In the bowl of a stand mixer, whisk flour, sugar, baking powder and salt together.

3. Switch your mixer to the paddle attachment, then mix in butter, egg, and vanilla into dry ingredients using medium-high speed.

4. Fold in sprinkles, chocolate chips and peanut butter chips.

5. Roll mixture into 22 cookie dough balls and place on your prepared baking sheets. Bake for 9-11 minutes, or until cookies are golden brown.

If you don’t have a standing mixer, you can use an electric hand mixer on medium speed, and a large bowl to prepare your cookie dough.

How to Store Your Sprinkle Cookies

Once your cookies are out of the oven, move them to a wire rack to allow them to cool to room temperature. This also keeps them from continuing to cookie on the hot cookie sheet.

After you have enjoyed a warm cookie (or two), place your room temperature cookies in an airtight container.

Store your cookie in a cool, dark location for up to one week.

Tips on How to Make the Best Confetti Cookes

  • Ensure your ingredients are at room temperature, this includes the egg and butter.
  • Over-mixing the dough can develop too much gluten, making cookies tough. Mix the ingredients until just combined, especially after adding the flour.
  • Cookies often continue to bake slightly after being removed from the oven. Take out your baked cookies when the edges are set but the center is still soft; they’ll firm up as they cool.
  • Experiment with flours for different textures and nutrient profiles. For example, use 1 cup all-purpose flour, and cake flour for the remaining ½ cup for a delicate texture.
Why aren’t my cookies soft?

Hard cookies can result from over-baking, too much flour, or over-mixing the dough. Take cookies out of the oven when they’re just barely set, and measure flour by spooning it into the cup rather than scooping.

What’s the best way to get evenly sized cookies?

Using a cookie scoop or tablespoon ensures uniform cookies, which bake more evenly. If you prefer large cookies, you can weigh the dough balls for exact sizing.

Can I freeze cookie dough?

Yes! Freeze pre-scooped dough balls on a tray, then transfer them to a freezer bag. You can bake them straight from frozen, just add a couple of minutes to the bake time.

Why did my cookies spread so much?

Cookies can spread if the dough is too warm, if there’s too much butter or sugar, or if your baking sheet is warm. Chilling the dough, using parchment paper, and measuring ingredients carefully can help.

Should I chill the dough before baking?

Although chilling your dough prior to baking isn’t necessary, some chill time may lead to thicker cookies. Once your dough is prepared, cover it tightly with plastic wrap and refrigerate for an hour. Scoop your funfetti cookies directly from the fridge onto your prepared baking sheet.
