Pantry Mac n Cheese

Ingredients

  • pasta whole grain or other high fiber option
  • spinach fresh or frozen
  • egg
  • Good Foods Queso Dip to taste

Instructions

  • Cook pasta, add in spinach, and a generous amount of Good Foods Queso.
  • Top with poached egg.

Course: Lunch
Servings: 1

Ingredients

  • 1/4 cup cheese of choice shredded
  • spinach to taste
  • tomatoes to taste
  • 1/2 avocado sliced
  • 1 whole wheat tortilla

Instructions

  • Heat skillet. Place tortilla down, then greens, cheese, and tomatoes.
  • Keep on heat until the cheese is melted. Top with avocado and enjoy.

Everything but the Bagel Hummus

Course: Lunch

Ingredients

  • 1 15 oz can chickpeas rinsed, drained
  • 1/4 cup tahini
  • 4 T olive oil
  • 2 tsp garlic
  • Big Squeeze of Lemon
  • 1 T EBTB seasoning

Instructions

  • Toss all ingredients into a blender 
  • Top with EBTB seasoning
