Beet Poached Salmon

Beet Poached Salmon
In a skillet over medium heat, combine beet juice, salt and pepper, and bring to low boil over medium heat. Add salmon fillets to the pan. Cover and cook over medium-low heat. Let simmer until fish is thoroughly cooked. Remove from pan and broil in oven. Squeeze lemon juice and add fennel seed. Broil for 15 mins or until a little light brown on top. For the bright pink color pictured here, brush fresh beet juice on top of salmon once fully cooked. Enjoy!

Oven Roasted Brussel Sprouts
Wash and cut 2 lbs of brussel sprouts in half. Toss in 3tbs of olive oil, 1 1/2 tsp salt, 1/2 tsp black pepper. Transfer to lined baking sheet, making sure brussels are in one layer. Bake in 425F for 25-30mins, stirring halfway. Enjoy!

Lemon Garlic Fettuccine
Boil half a pot of water. Add one package fettuccine until cook until al dente, about 10-12 mins. Remove hot pasta from water. Toss with 1-2 tbs butter and season generously with garlic salt, basil, and Parmesan cheese. Top with lemon juice. Enjoy!
