This is one of my favorite ground turkey recipes that takes the traditional comfort food and elevates it with a focus on healthy ingredients, vibrant flavors, and an easy sweet and tangy glaze that adds a finishing touch.   2. Sauté the Aromatics: Finely chop the onion and sauté it with minced garlic in olive oil over medium heat until softened and fragrant. This step enhances their natural sweetness and ensures they blend seamlessly into the meatloaf.

  1. Mix the Ingredients: In a large bowl, combine the sautéed onion mixture with ground turkey, bread crumbs, egg, frozen corn, peas, and shredded Swiss cheese. Mix until just combined; over mixing can make the meatloaf dense.

  1. Bake: Transfer the turkey meatloaf mixture to the prepared loaf pan and smooth the top. Bake in the oven for 45 minutes.
  2. Prepare the Sweet & Tangy Glaze Ingredients: While the meatloaf bakes, mix ketchup and honey in a small bowl. This glaze will elevate the flavor and presentation of your meatloaf.
  3. Finish & Garnish: Remove the meatloaf from the oven and spread the sweet and tangy sauce over the top of the meatloaf. Garnish with fresh parsley for a vibrant finish.

  • Refrigerate: Once cooled, store leftover slices in an airtight container in the fridge for up to 4 days.

Ingredients
  

  • 1 Tbsp olive oil
  • 1 lb ground turkey
  • 1 red onion small
  • 1/2 cup peas frozen
  • 1/2 cup corn frozen
  • 2 cloves garlic minced
  • 1 egg
  • 1/2 cup bread crumbs
  • 1/4 cup Swiss cheese shredded
  • parsley chopped

Sweet & Tangy Sauce

  • 1/4 cup ketchup
  • 3 Tbsp honey

Instructions
 

  • Heat oven to 375 degrees F. Line baking loaf pan with parchment paper. 
  • Chop up onions and sauté in pan with minced garlic and olive oil.
  • In a large mixing bowl, add sautéed onions, garlic, and mix with ground turkey, egg, bread crumbs, corn, peas, and shredded cheese.
  • Put turkey mixture into lined loaf pan and bake in oven for 45 minutes.
  • While meatloaf is baking, combine honey and ketchup.
  • When meatloaf comes out of the oven, top with honey/ketchup mixture.
  • Garnish with fresh chopped parsley.
