This pudding is best enjoyed fresh, but you can store leftovers if needed:

  • Refrigerator: Transfer the pudding and caramelized bananas to an airtight container. Store separately to maintain the texture of the caramelized bananas. Consume within 1–2 days.
  • Freezer: The pudding can be frozen for up to a month in a freezer-safe container. However, the texture may change slightly upon thawing. Let it defrost in the fridge overnight before serving, and add fresh caramelized bananas on top.

Tips for Making Easy High Protein Banana Pudding

  1. Choose ripe bananas: The riper the banana, the sweeter your pudding will be. Look for bananas with brown spots for the best flavor.
  2. Use a high-speed blender: To achieve a silky-smooth pudding, use a blender or food processor that can fully break down the cottage cheese.
  3. Don’t skip the butter: Butter is key to achieving beautifully caramelized bananas with a rich, golden crust. For a healthier twist, you could use plant-based butter that has a lower saturated fat content.
  4. Serve warm: The contrast of warm bananas with chilled pudding takes this dessert to the next level. For a cozy variation, gently warm the tasty pudding as well.
  5. Get creative with toppings: Try adding toasted coconut, crushed pecans, or a sprinkle of cocoa powder for an extra layer of flavor.
