Mediterranean Salad

Ingredients
  

Salad

  • 3 cups cooked quinoa
  • 2 cups drained chickpeas
  • 1 cup cucumbers
  • 1/2 cup sliced onion
  • 1 cup corn
  • 1/4 cup sunflower seeds
  • 1/4 cup chopped mint
  • 1/4 cup chopped parsley

Dressing

  • 1 generous pour olive oil
  • Balsamic vinegar
  • 1 drop maple syrup
  • 1 tsp Dijon mustard

Instructions
 

  • Prepare quinoa and set aside.
  • Cut and trim vegetables.
  • Mix dressing ingredients. Pour over salad once fully combined.
